peppery dijon parsley rub

Recipe makes about 1/4 cup of rub.


  • 1/4 cup chopped fresh parsley
  • 2 tableaspoons Dijon-style mustard
  • 1 tablespoon cracked mixed peppercorns (black, white, green or pink) or cracked black pepper
  • 2 large cloves garlic, minced
  • 1 teaspoon salt


  1. Combine all ingredients in small bowl; press evenly onto beef steak(s).
  2. Grill, pan-broil or broil steaks; place roast in oven and cook according to chart. Cook to medium rare (145°F) to medium (160°F) doneness.
