Ground Beef, salsa, avocado and linguine make for a tasty and delicious meal in just 30 minutes. Perfect for a weekday lunch or dinner.
Ingredients
- 1 pound ground beef (96% lean)
- 1 small red onion, divided
- 8 ounces uncooked linguine, broken in half
- 3/4 cup salsa verde
- 1 cup container (8 ounces) fat-free sour cream
- 4 cup baby spinach leaves
- 2 small plum tomatoes, sliced
- 1 avocado, sliced
- 1/4 cup chopped fresh cilantro
Directions
- Cook pasta according to package directions; drain. Set aside.
- Meanwhile, cut 1/4 of onion into thin slices; set aside. Chop remaining onion. Heat large nonstick skillet over medium heat until hot; brown Ground Beef with chopped onion 8 to 10 minutes, breaking beef up into 3/4-inch crumbles.Cook's Tip: Cooking times are for fresh or thoroughly thawed ground beef. Ground beef should be cooked to an internal temperature of 160°F. Color is not a reliable indicator of ground beef doneness.
- Stir in cooked pasta, sour cream and salsa. Reduce heat; simmer 5 minutes or until heated through.
- Divide spinach evenly among four plates. Spoon beef mixture over spinach. Top with tomatoes, avocado, sliced onion and cilantro.
