Frito Pie® is a New Mexico favorite, you can find this almost everywhere but many locals say the only way to eat a Frito Pie is from the bag of Fritos. All of the ingredients are added to the "one serving" bag of chips and you enjoy them from there. This is a piece of every New Mexican's childhood!

Ingredients

  • RED CHILE
  • 1 pound ground beef (95% lean)
  • 1 small onion, finely chopped
  • 1 large clove garlic
  • 2 tablespoons olive oil
  • 16 ounces Red Chile puree
  • 16 ounce Swanson's broth
  • 2 teaspoons flour
  • 2 tablespoons butter
  • BEANS
  • 2 cups pinto beans
  • 6 cups water
  • salt to taste
  • TOPPINGS
  • small (individual size) bags of Fritos
  • diced tomatos
  • shredded lettuce
  • shredded cheese
  • diced onions
  • diced avocado

Directions

Beans: In a Crock Pot add 6 cups of water, salt and beans. Cook beans on high for approximately 6 hours.

Chile: When beans are almost done, heat large nonstick skillet over medium heat, add olive oil, onions and garlic.

Saute’ until onions are clear. Heat butter and flour until browned, combine with onions and garlic. Add chile and broth. Let simmer for ~20 minutes.

In a large nonstick skillet over medium heat add ground beef; cook 8 to 10 minutes, breaking into small crumbles and stirring occasionally. Pour off drippings and add to chile mixture and let continue to simmer.

When the beans are done add the chile mixture.

To serve, sprinkle Fritos in the bottom of a bowl, add chile beans, diced tomatoes, shredded lettuce and shredded cheese and Enjoy!
