15-Minute Albondigas Soup

Ingredients

  • ALBONDIGAS
  • 1 Package fully-cooked beef meatballs
  • 2 cans (14 ounces each) ready-to-serve beef broth
  • 2 cups frozen corn
  • 1 cup prepared salsa
  • tortilla chips
  • chopped cilantro (to taste)

Directions

  1. Combine beef broth, corn and salsa in medium saucepan.
  2. Bring to a boil and simmer 5 minutes.
  3. Meanwhile, microwave meatballs according to package directions.
  4. Add meatballs to soup mixture and serve.
  5. Garnish with crumbled tortilla chips or chopped cilantro, if desired.
