Season 3-4 lbs. of your favorite strip steak (we used New York Strip) with salt, pepper, and steak seasoning.
Whisk together the sauce: 3-4 cloves garlic (pressed), ¼ C. adobo sauce (from canned chipotle peppers), ¼ C. apple cider vinegar
¼ C. fresh lime juice
1 T. cumin
1 T. oregano
1 t. paprika
1 t. ground cloves
½ t. ground cinnamon
1 bay leaf
1 C. beef broth
Layer ½ a sliced onion in your slow cooker, add the seasoned steaks, pour the sauce over, and top with cilantro sprigs and a few pats of butter.
Cover and cook on low for 5-7 hours (or high for 3-4 hours).
Slice the cooked steak diagonally across the grain and return it to the slow cooker to keep warm.
