beef strip salad with honey ginger dressing
- 1 pound beef
- 1 lemon
- 1/2 cup soy sauce
- 1/4 cup packed brown sugar
- 1 tablespoon paprika
- fresh squeezed lime juice
- Salt to taste
- 1/2 cup olive oil
- 1/2 cup rice vinegar
- 1/3 cup honey
- 1 tablespoon freshly grated ginger
- 1/8 teaspoon pepper
- grape tomatoes
- cucumber slices
- green onions (for garnish)
- 12 ounce can Mandarin oranges
Trim the Beef to your liking. Cover in Brown Sugar and Paprika, let sit in refrigerator for an hour or so. Remove from refrigerator and tenderize. Cut into small fajita like strips, cutting against the grain of the meat. Add Soy Sauce and the juice of one Lemon to a plastic gallon sized bag. Add the meat and let marinate in the refrigerator for an hour.
Thinly slice the Cucumbers and cover with juice from a fresh squeezed lime. Let sit in refrigerator until you are ready to add them to your salad.
Drain Mandarin Oranges, place in refrigerator
In blender add Rice Vinegar, Honey, Ginger, Pepper and a pinch of Salt. Blend. Slowly integrate the Olive Oil in a steady steam. Put in refrigerator to chill.
Remove meat and cook to your liking on the grill, stove top or oven. Put a 1/2 cup of mixed greens into your bowl, cover with Cucumbers from refrigerator, add cooked Beef, Grape Tomatoes, Mandarin Oranges and Green Onions.
Serve with Salad Dressing.
